Easy Low Carb Snack- Zucchini Pizza Bites

So today I realized something: I do not prepare for my ravenous snacking like I do for my son’s. And I should. Because I am constantly STARVING... or so it seems. 
I’m still breastfeeding my daughter so I find myself constantly hungry. The problem is this- either nothing sounds good or I don’t feel like going to all the trouble to make something healthy. But today I remembered a simple recipe that I haven’t thought about in forever!
I’ve been eating lower carb for a little while now. I’m not as low carb as I’d like to be due to breastfeeding, but I’m much lower carb than usual. And I’m making much healthier choices, eating mostly gluten free, etc. So I’ve been having fun coming up with all kinds of healthy alternatives to my favorite foods.
While I was standing in the kitchen thinking the all too familiar thought “there’s nothing for me to eat,” I remembered the zucchini in the fridge that’s been needing to be eaten up. Zucchini pizza bites! Duh!
 
I was craving something carby and cheesy and savory (as usual) so this was perfect. I could feel like I was eating something carby but actually be eating something healthy ;) And not mention it required very little prep...  busy mom win!
 
Easy healthy low carb snacks zucchini pizza bites
Ingredients:
Zucchini, however much you want (I used a half of one and it was perfect for just me)
Coconut oil
Pasta sauce
Shredded cheese (I used cheddar jack)
*Optional: pepperoni, mushrooms, other pizza toppings
 
Instructions:
Preheat the oven to 400
Slice the zucchini in about 1/4 inch rounds
Spread zucchini onto a baking sheet and toss in coconut oil (or whatever oil you choose)
Bake for 5-6 minutes 
Spoon pasta sauce on slices and sprinkle cheese on top 
Bake for 10 minutes or until cheese browns 
 
*I usually put pepperonis in anything pizza related, but this time I was out of them. It was actually DELICIOUS the way it was but next time I’m going to add pepperonis and even some cooked mushrooms! YUM!
