(Kid Friendly) Healthy Rolled Oats and Almond Flour Pancakes

Healthy low carb rolled oats and almond flour pancakes 

Ingredients:

cup old-fashioned rolled oats

1 1/2 cups blanched almond flour

2tsp baking powder (or 1/2 tsp baking powder and 1/2 tsp baking soda)

1/2 tsp ground cinnamon

1/2 tsp salt

1 cup whole milk
1/4 cup pure maple syrup  
3 tbsp butter, melted
2 eggs
1 tsp pure vanilla extract (I only had 1/2 tsp but I had some sugar free vanilla syrup on hand so I added a dash of that)
Coconut oil cooking spray
 
Instructions:
Blend oats in blender until ground up
Mix/blend dry ingredients together
Add wet ingredients and mix/blend all together
Heat a nonstick pan over medium heat (I did level 6 on my electric stove) OR heat a griddle
Spray with coconut oil spray (or whatever cooking oil you have on hand)
Cook pancakes about 2-3 minutes per side
Enjoy by themselves or with butter and pure maple syrup! 
Freeze leftover pancakes for an easy, healthy meal option during the week. Just reheat in the microwave or toaster oven!
