Quick and Simple Keto Taco Egg Bake
It may not look like a food blogger’s photo, but it tastes 👌🏼👌🏼👌🏼🤤🤤🤤
Even with how miserable I feel today - in pain from my rib popping out and my back being all out of whack, plus sore throat/lightheaded ness - my eating habits are still important to me.
As much as I want to sit on the couch in my PJs and stuff my face with a Hula Grill beef sarong wrap and sweet potato fries and binge watch Netflix, I know how I would feel in the end. Like total crap.
So... I honed in on my inner SuperMom skills and whipped up my favorite egg bake which just so happens to be Keto friendly 😊
I love this egg bake because it’s made with stuff I usually have on-hand! #momwin
And clearly it is very simple with little effort required so it’s perfect for us moms that still have to feed our kids (and ourselves) even when we feel like death 😄
Ingredients:
For the egg bake
- 1 lb beef
- 1 packet Taco Bell seasoning packet (or whatever taco seasoning you have)
- 1/4 cup or so of cream cheese
- 6-8 eggs
- 1/4 cup or so of milk or half-n-half
- 1/4 cup or so Frank’s hot sauce (or whatever you have)
- Salt and pepper
- 2 cups shredded sharp cheddar cheese (I didn’t measure it, just eyeballed it. I like a lot of cheese!)
Toppings
- Feta cheese
- Avocado
- More hot sauce (optional)
Instructions:
Preheat the oven to 350.
Brown the ground beef in a cast iron skillet over medium-high heat.
Meanwhile, get a mixing bowl or liquid measuring cup out and mix up the egg mixture. Add the eggs, milk or half n half and hot sauce. You can add half of the cheese at this time too.
Once the beef is cooked, add the taco seasoning and water according to directions on packet. Usually it’s 1 packet and 3/4 cup of water.
Stir to combine and turn the heat to low. Let it simmer until it’s thick enough for your desired taste. (My packet said 10 minutes but I definitely didn’t do it that long!)
Turn off the heat and add cream cheese. Stir to combine.
Take out a 9x13 glass casserole. Add the meat and spread it evenly across the bottom.
Pour the egg mixture over top, making sure it’s also spread out evenly.
Salt and pepper to taste.
Add the remaining cheese (or however much you desire) to the top.
Bake for 25-30 minutes!(Mine was perfect at 26 minutes + I have an electric stove/oven).
